Quick Eggplant with Dal

Easy easy and a nice way to use to eggplants so common in US markets.

INGREDIENTS
 

PRESSURECOOK:
1 large eggplant diced
3/4 cup toor dal
2 garlic cloves minced
1 medium onion chopped
1 1/2 tsp red chili powder
1/2 tsp turmeric powder
1 1/2 tsp tamarind pulp
salt
SEASONING:
1 tbsp cooking oil
1/2 tsp mustard
1/2 tsp cumin seeds
few curry leaves
1/2 tsp urad dal
1 dry red chili slit


DIRECTIONS

  1. Pressure cook all the ingredients in the first set with 2 1/2 cups of water till dal is well done . Mash everything well.

  2. Heat oil in a pan .Splutter mustard and add all other ingredients in the second set. Add to the curry and serve with rice.
