Pineapple Fried Rice

Indian version of Pineapple Fried Rice . This is how my mom makes it.You can also use canned pineapple rings to make this dish.I normally add one whole pineapple . But if you want it less sweet make it half pineapple.Substitute half ghee with oil if you want to make it more healthy.Serve in a pineapple boat along with spicy chicken curry , this will melt any heart :)

INGREDIENTS
 

1 pineapple
2 cups basmati rice
1/2 cup green peas
1/2 cup grated carrot
1/2 cup chopped beans
2 onions sliced
3 cardamoms
1 stick cinnamon
1 bayleaf
1/2 tsp black pepper
5 cloves
1 tsp garam masala(optional)
salt to taste
2 tsp lemon juice
raisins and cashew nuts as required
chopped cilnatro to garnish
ghee as required.


DIRECTIONS

  1. Soak rice for 30 minutes and drain .

  2. Heat ghee and fry the onions till they are golden brown.Drain them out.

  3. Add little bit more ghee and fry the beans , carrots and peas.

  4. Add some more ghee .Add cardamoms , black pepper ,cloves , cinnamon and bayleaf and stir fry till the aroma is released.Add the rice and fry the rice till the rice is translucent.Add water along with lemon juice, garam masala and salt. Cook the rice and when the rice is well done strain the rice through a colander.Discard the whole masalas if needed.

  5. Meanwhile finely chop the pineapple .

  6. Now take a large kadai and heat 1 tsp of ghee .Add the raisins and cashewnuts and fry them .

  7. To the same kadai add some rice and some vegetables . Mix gently making sure not to break the rice. Repeat the process till you have the entire rice , vegetables and pineapple well mixed.

  8. Garnish with corainder leaves . Serve in pineapple boat with chicken curry.

Tried this last week and came out very well . This was easy too .
